Bob’s Pizza

Friday Night is Pizza Night.

Here’s my way of making a couple of homemade personal size pizzas that are fast and delicious.

It starts with the crust. I use Naan Bread that I buy in a 10 pack at Costco. Other grocery stores sell it as well. It freezes well, so I pull out a couple of the frozen naans when I start my prep. Naan bread is soft and tasty but firm enough to hold up to the layers you add onto it. Plus you save a ton of time not making your own dough or rolling out a store bought product.

For the base sauce, I dice up onions and peppers (sometimes adding garlic, tomatoes, parsley… even shaved Brussel sprouts). The diced mixture goes into an oven proof bowl to which I add a couple of tablespoons each of Olive Oil and Balsamic Vinegar.

It bakes in a 375 degree oven, with an occasional stir for about 30 minutes.

Alternatively, and this will save you some time is to microwave the mixture until the onions soften (approximately 5 minutes).

Once the mixture is cooked, remove it from the oven to add a few tablespoons of some sort of tomato flavour to it.

I have used PC Brand Pizza Sauce, Salsa and in a pinch when I had nothing else around I used Ketchup. Shake in some grated Parmesean Cheese. Mix it all together and you will have a nice thick base for your pizza.

Keep the oven at 375 degrees and begin to assemble the pizzas.

Add spoonfuls of the vegetable base onto the Naan bread and spread it to cover the surface.

Add your favorite cheese. I have used the traditional Mozzarella cheese, but use whatever cheese you like or whatever you have around. Swiss and Feta cheese are a few I really like.

You can stop here if you want a vegetarian meal (or continue adding more vegetarian options like olives, chopped spinach, basil… whatever you think would work).

For the meat layer I am not restricted to Pepperoni. I often slice up cooked Italian Sausage that I keep in the freezer (that’s a blog for another day). Other great choices are thin sliced Calabrese, Ham or leftover meat from a previous meal.

When you have finished adding everything you want just slide the pizzas directly onto the middle rack in your oven. You can put a cookie sheet underneath to catch any spills if your sauce starts to leak a bit. Cook for 12 to 15 minutes and remove to a cutting board. Drizzle it with a bit of olive oil and let it sit for about 5 minutes. Then you are ready to slice it and eat.

If there is any left over, store the slices in a Ziplock bag for lunch or an appetizer the next day.
