Veggie Burger

Makes 12-14 Portions

2 Tbsp oil

1 medium finely chopped onion

1 cup finely chopped mushrooms

1 red pepper finely chopped

28 0z Cannolini beans (drained and rinsed)

2 cups fresh whole wheat bread crumbs

2 cups grated cheddar cheese

2 egg yolks

1 tsp cumin

1 tsp dried herbs of your choice

1/2 tsp salt

1/2 tsp pepper

1/4 cup flour

Instructions:

Heat oil on medium temperature in fying pan. Saute onions, mushrooms, red pepper, cumin and until softened.

Mash beans in large bowl. Add onion, mushroom and red pepper mixture gently mix. Add breadcrumbs, cheddar cheese, herbs, salt, pepper and egg yolks. Mix well.

Scoop out the mixture and place on a parchment lined baking sheet.

Dip each in flour and form into a patty by pressing with the bottom of a glass or use your hand.

Fry each patty in a lightly greased frying pan just until browned on both sides.

Bake at 350F for approximately 25 minutes.

Enjoy with or without buns and a side salad.

Notes:

Feel free to add spices and herbs of your choice.

This recipe can easily be halved. These veggie burgers freeze beautifully and comes in handy for those quick dinner or lunch days. Cook according to direction, let cool. Wrap well and freeze. Reheat in the oven or microwave.
