Breakfast Casserole

Ingredients:

1 Large package of frozen hash browns

4 cups grated cheese (cheddar, Monterey Jack)

2 cups of cooked ham, bacon or sausage

7 eggs

1 cup milk

1/2 tsp salt

1/2 tsp ground mustard

Directions:

Thaw the frozen hash browns.

Preheat oven to 350F.

In a greased 13×9 baking dish layer starting with hash browns, followed by a layer of cheese then the ham.

Beat the eggs, salt and mustard together. Pour the egg mixture over the layers in the casserole dish.
Cover with foil and bake for 1 hour.

Uncover and continue to bake for another 15 minutes.

Individual portions:

Make in muffin cups, layer the same way as above. Cover with foil, bake for approximately 25-30 minutes. Remove foil and bake for another 5 minutes.

Tips:

This casserole can be made into a vegetarian meal by eliminating the meat and adding your chopped up veggies.

Feel free to add spices of your choice.

Can be made in smaller or individual sized baking pans. Cooking time will need to be adjusted

Freezer friendly meal.
