Breakfast Sandwiches

Ingredients:

12 English Muffins

12 Eggs

2 Tbsp milk

1 tsp salt

1/2 tsp ground pepper

12 slices of Cheddar Cheese

12 slices of peameal bacon

Instruction:

Preheat oven to 325F. Grease a 9×13 pan.

Whisk eggs, add milk salt and pepper.

Pour mixture into the greased dish.

Bake for 25 minutes or lightly set in the middle. The eggs will get cooked more when the breakfast sandwiches are reheated in the oven.

Cool the set eggs before cutting into 12 squares.

To assemble place the cut English Muffins on a baking sheet

Heat the sandwiches at 350F for about 5 minutes or until the cheese melts.

Freezer tips:

These sandwiches freeze well. Wrap each sandwich individually in foil or wax paper and place in a freezer resealable bag. To reheat from frozen, remove wrap and wrap the sandwich in a paper towel. Microwave for 1 minute on defrost. Flip over and microwave for about 50 to 60 seconds on high until warmed through.
