Irish Soda Bread

4 cups all purpose flour

4 Tbsp sugar

1 1/2 tsp kosher salt

1 tsp baking soda

4 Tbsp cold cubed unsalted butter

1 3/4 cup cold buttermilk

1 egg

3/4 to 1 cup currants

Instructions:

Preheat oven to 375 F.

prepare medium cast iron fry pan by lightly spraying with Pam

Combine the dry ingredients flour, sugar, salt and baking soda into your stand mixer bowl, mix on low until combined.

Add the cubed butter and mix on low until the flour mixture and butter are incorporated.

lightly beat the egg and add to the buttermilk.

Slowly add the buttermilk and egg to the flour mixture and beat on low.

Add l little flour to the currants and add to the dough.

Sprinkle some flour on a work surface, take the dough from the bowl and knead gently a few times and form into a round loaf.

Place the loaf into the prepared cast iron pan, place in the preheated oven for 40-45 minutes.

Remove and place on a cooking rack.

Notes:

The cast iron pan gives this bread a wonderful crispy outer crust with a soft inside. This loaf can be baked in a greased or lined baking pan.

The scoring with an X on the top allows the center to bake.

Substitute raisins for currants or eliminate both.
