Hummus

Who doesn’t love hummus? We can always find a container or two tucked away in the fridge for when we are looking for quick snack or appetizer. Hummus is  such a versatile, healthy food that is also inexpensive.

As other things that I love to eat, I decided to try my hand at making my own version. This hummus is simple to make and I used ingredients that I had at home.

1 can of chickpeas (398 ml)

1 large clove of garlic minced

1/2 tsp kosher salt

Juice of 1/2 lemon

1/4 tsp cumin

Drain the chickpeas reserving about 1/2 cup of the liquid

 

Peel the chickpeas (yes peel) if you want a smooth texture. The skins slides off easily (this step takes about 10 minutes). Eliminate this step if you cant be bothered. The result will taste the same, but have a grainier consistency.

Put the chickpeas in the food processor and pulse until they crumble, stop and scrape down the sides occasionally.

Add, lemon juice, garlic, cumin and salt. Blend until smooth.

Slowly add the chickpea water a little at a time until the desired consistency forms ( start with 1/4 cup, you may not need all the liquid).

Spoon hummus into a serving bowl and refrigerate for about 1 hour, if you can wait that long.

At serving time, drizzle the top of the hummus with olive oil and sprinkle with paprika.

Tips

To  create a nutty flavour and smooth texture add 1/4 – 1/2 cup tahini paste.

Experiment with different spices, like curry powder or parsley/cilantro.

Serve with crisp sliced vegetables and warmed pitas or naans.

The hummus can be made in advance, the flavours are enhanced the longer it is stored in the refrigerator.
