These are the best veggie burgers that I have ever tasted. I wrote out this recipe years ago, and I am not sure of the origin. It is a fairly simple recipe that can be enjoyed all year round. The fresh breadcrumbs and mushrooms helps to keep this burger moist.
Ingredients
1 Tbsp oil
1 small onion
3/4 cup finely chopped mushrooms
1/2 red pepper finely chopped
14 oz. can of cannellini beans (white kidney beans)
1 2/3 cups fresh bread crumbs
1 cup cheddar cheese
1 tsp Kirkland organic no-salt seasoning (Costco brand)
1 egg yolk
seasoned flour
Heat oil in saucepan, saute onion, mushroom and pepper until softened.
Mash beans add onion & mushroom mixture combine with breadcrumbs, seasoning, egg yolk and cheese. Mix well.
Shape into 8 patties .
Roll each in flour seasoned with salt and pepper and refrigerate for at least 30 minutes.
Fry in hot vegetable oil for a few minutes until just golden brown.
Bake in a preheated oven at 375 F for about 15 minutes.
Tips
Adjust or add seasonings that suit your taste.
Try smaller appetizer portions that can be served with dipping sauce.
Taste great with or without buns or serve with rice and salad.
