It is so nice to take advantage of being outside in the summer. We love quick and easy meals that can be prepared on the BBQ and enjoyed on the deck. Bob and I have cooked salmon in a variety of different ways. This recipe used orange slices to support the salmon and adds moisture and a hint of citrus flavour to the salmon as it cooks.
Prep time is just a couple of minutes but the presentation and taste is amazing!
Slice up an orange and place a skinless salmon fillet on top of a pair of the slices.
Brush the salmon with seasoned olive oil. I used cumin and salt. Then add some chopped parsley.
Transfer to a hot BBQ and grill with the lid closed for about 10 minutes.
