Buffalo Cauliflower Bites

These cauliflower bites have all of the sparky taste of their chicken wing cousins but are a healthier and simpler alternative.

I cooked them up on a cast iron pan on the BBQ, but you can also bake them in a 400 degree oven.

Ingredients

1 large head of cauliflower separated into small fork sized pieces.

1 cup flour

1 cup water

2 tablespoons vegetable (or coconut) oil

1 teaspoon onion salt

1 teaspoon minced garlic

1/2 cup Franks Hot Sause

1 tablespoon butter

Blue Cheese or Ranch salad dressing

Combine the flour, water, oil, garlic and onion salt, then stir in the cauliflower making sure to get them coated thoroughly.

Heat the cast iron pan on the BBQ to about 400 degrees, then add the cauliflower mixture and close the lid. Stir every 5 minutes or so to get a good cook on all of the pieces. Continue for 20-25 minutes.

Then heat up the Franks Hot Sauce in a small saucepan and add the butter, stirring until melted. Add the sauce to the cauliflower and stir to coat the pieces.

Remove from heat and serve with Blue Cheese, Ranch or your favorite dip.

Tips

Add celery and carrot sticks to make it more like Pub Grub.

Garnish with chopped parsley or cilantro.

Serve as a side dish or appetizer.
