BBQ Peaches

This recipe serves 2 but feel free to add more peaches and adjust the rest of the ingredients accordingly, you can’t go wrong.

A sweet ending to a summer BBQ meal. This recipe can be prepared in advance and so its ready to be placed on a low temperature BBQ when you are getting ready to enjoy your main meal. Let it cook for about 20-25 minutes then turn off the BBQ. It can stay on the grill until dessert time.

This dessert can be enjoyed as is or if you are feeling creative add ice cream, cake, nuts either individually or all together!

Ingredients

  • 2-3 medium peaches (peeled and sliced)
  • 1 tsp lemon juice
  • 1 Tbsp maple syrup
  • 1/4 cup brown sugar
  • 1 1/2 tbsp Tbsp butter cut into small pieces
  • Direction:
  • Spread 1/2 Tbsp of butter on the foil tray.

Mix all ingredients together and pour into the tray, top with the rest of pieces of butter.

Cover lightly with foil and place on bbq grill.

Cook over low heat for about 20 minutes.

Tips:

A darker brown sugar will give a nice caramelization to the peach mixture.

I peel my peaches and slice or if they are small peaches I just cut them in half.

Cooking time can vary, just remember that the longer is stays on the BBQ the more juices will flow, and the softer the peaches will be.

There are so many ways to serve these peaches. My favourite is over grilled lemon loaf and topped with a scoop of ice cream and sprinkled with some toasted almonds.
