Panko Crusted Corn

There is nothing like the taste of farm to table fresh foods, especially in the summer months. I am so lucky to be near farm country.  Plus the weekly farmer’s markets which brings our local farmers together to sell their harvest of summer fruits, veggies and other fun items. I feel very fortunate to have these markets available and I try my best to support them each week from May to the end of September.

Now we are into corn season and we have been enjoying the pure sweet taste of this vegetable. As I said in the Instagram post, I do love corn in the traditional way, cooked with a slather of butter, but my creative side wanted to try something a little different and here it is. Let me know what you think!

Ingredients:

1 tsp butter

1/4 cup Panko crumbs

1/4  cup Mayonnaise

1/2 tsp seasoning salt (see tips below)

4 cobs of corn cooked and grilled

Cooking the corn:

Bring a large pot of water to a boil. in the meantime husk the corn remove the silk threads and rinse.

Place the cleaned husked corn into the boiling water. Cover and cook for 4 to 5 minutes.

If you would like BBQ grill marks, place the cooked corn on a hot grill for a few minutes turning to make sure all of the corn is grilled.

Topping:

In a skillet melt the butter  add the Panko crumbs, stirring until golden. Watch closely as the crumbs get to a golden colour and can turn quickly turn to brown, which is not what you want! Place the crumbs in a small bowl and set aside.

Mix mayonnaise and 1/2 tsp of seasoning salt in a small bowl.

Brush the mayonnaise mixture on each cooked and grilled cob of corn and sprinkle with the Panko mixture.

Tips:

Make your own seasoning salt by combining 2 tbsp salt, 1 tsp sugar, 1/2 tsp garlic powder, 1/2 onion powder, 1/2 tsp paprika & 1/2 tsp corn starch.

Add some fresh or dried parsley to the mayonnaise mixture.
