♥ My daughter Brittany’s fiancee Tyler, first made this salsa at our house on one of their visits with us. They were going to Tyler’s family get together the next day and they asked him to bring it along. We were lucky not only to taste it but also see this salsa in the making. It has a bold and spicy flavour that quickly becames addicting.
This recipe makes a large batch that only gets better with age. Paired up with some lime Mojitos it made for a wonderful start to a great evening.
Here is Tyler’s recipe:
Ingredients:
- 2 cans black beans (rinsed and drained)
- 2 cobs of corn (grilled)
- 3 Roma tomatoes
- 1 red onion
- 1 bunch of green onions
- 1 red pepper
- 1 green pepper
- 2 tablespoons olive oil
- 1 lime (juiced)
- Franks Red Hot sauce to taste
- 1 tablespoon minced garlic (fresh or bottled, both work fine)
- Salt & pepper to taste
- Optional: add fresh cilantro to taste
Directions:
- Grill corn on the cob
- Add black beans to a large mixing bowl
- Slice corn off of the cob and add to mixing bowl
- Dice tomatoes, onions and peppers and add to bowl and mix well
- Add olive oil, lime juice, hot sauce, and garlic, mix well
- Add salt and pepper to taste
- Refrigerate and enjoy!
Tips:
- Best to prepare and refrigerate overnight
- Recommended to serve with ‘Hint of Lime’ Tostitos chips
- Canned corn and canned tomatoes can be substituted
- Use any leftovers to enhance soups, salads, omelettes
