Uncle Ed’s Pan Cookies

We have lots of great memories of our Uncle Ed, everyone that met him remembered him and loved him. He was everyone’s ‘favourite Uncle’.

This is one of his recipes and I think all of our family either has this recipe or remembers its great taste.

What makes this cookie unique is that he baked it in a pan. A great easy way to feed a crowd, something our large family knows plenty about.

Another reason that it was a crowd pleaser, is that no matter how you like your cookies this baked in a pan method delivers. A softer cookie comes from the middle section and they get a bit firmer as you head to the outside. The edges along the pan have a crisp crunch to them. That’s Aunt Cathy’s favourite part and ours too!

Ingredients:

1 cup white sugar

1 cup brown sugar

1 cup margarine

2 eggs

1 tsp vanilla

1 1/2 cup flour

1 tsp salt

1 tsp baking soda

3 cups oatmeal

1 cup chocolate chips

Instructions

Preheat oven to 325F.

Spray a rimmed cookie sheet with cooking spray (or line with parchment paper leaving extra on the sides to use as a handle for easy removal after baking).

Cream margarine and sugar together. Add eggs and vanilla.

Mix in flour, salt and baking soda until blended. Add oatmeal and mix well. Incorporate chocolate chips.

Spread the mixture evenly onto a prepared cookie sheet.

Bake in a 325 F preheated oven for 25 minutes or until the edges are lightly browned.

Let cool in the pan for at least 20 minutes. Cut into squares.

Makes approximately 40 portions.
