Ingredients
- 1 Tbsp olive oil
- 2 onions chopped
- 2 cloves garlic chopped
- 2 Tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp paprika
- 28 oz can of tomatoes
- 1 lb boneless skinless chicken cut into small pieces
- 19 oz can red kidney beans rinsed and drained
- 19 oz can chickpeas rinsed and drained
- 1 cup frozen corn
- salt and pepper
- 1/4 cup coriander
Direction
- Heat oil in deep pan, add onions and garlic. Cook to 5 minutes until tender.
- Add chili powder, cumin,oregano and paprika stir for about a minute
- Add canned tomatoes with liquid and bring to a boil
- Add chicken, beans and chickpeas. Cook for about 20-25 minutes.
- Add corn and cook for an additional 5-10 minutes.
- Season with salt and pepper and sprinkle with chopped coriander.
