Chicken Chili

Ingredients

  • 1 Tbsp olive oil
  • 2 onions chopped
  • 2 cloves garlic chopped
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp paprika
  • 28 oz can of tomatoes
  • 1 lb boneless skinless chicken cut into small pieces
  • 19 oz can red kidney beans rinsed and drained
  • 19 oz can chickpeas rinsed and drained
  • 1 cup frozen corn
  • salt and pepper
  • 1/4 cup coriander

Direction

  • Heat oil in deep pan, add onions and garlic. Cook to 5 minutes until tender.
  • Add chili powder, cumin,oregano and paprika stir for about a minute
  • Add canned tomatoes with liquid and bring to a boil
  • Add chicken, beans and chickpeas. Cook for about 20-25 minutes.
  • Add corn and cook for an additional 5-10 minutes.
  • Season with salt and pepper and sprinkle with chopped coriander.
