Karie has been a long time friend of my kids. She loves baking and is sharing her all time favourite Christmas cookie as we zoom bake together during this pandemic year.
Karie typically mixes white and semi sweet chocolate and a combination of chocolate chips and chunks. She makes it more festive by using Christmas coloured Rice Cereal.
After my baking session with Karie and taste testing these cookies I can see why it is her favourite!
Ingredients:
1 cup shortening golden or regular flavour) or butter
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
2 Tbsp milk
1 1/2 tsp vanilla
1 3/4 cup flour
1 tsp baking soda
1/2 tsp salt
6 squares white chocolate chunks or combination of white and semi sweet (coarsely chopped)
1 1/2 cup rice cereal
Directions:
Preheat oven to 375F
Cream shortening, sugars, egg, milk and vanilla in a large bowl until light and creamy.
In a separate bowl, combine flour, baking soda and salt. Add to creamed mixture beating at low speed until blended. Stir in chocolate chunks and cereal, mixing well.
drop dough using a cookie scoop or heaping spoonfuls onto an ungreased or parchment lined baking sheet.
Bake at 375F for 8-10 minutes or until golden brown.
