Our “go to” Peanut Butter cookie fix! It is so easy to make and we love the granulated sugar crunch.
Simple ingredients that are normally found in my cupboards:
- Cream together 1/2 cup softened butter, 1/2 cup peanut butter, 1/2 cup granulated white sugar, 1/2 cup brown sugar, 1 egg and 1/2 tsp vanilla
- In separate bowl,combine dry ingredients 1 1/4 cup all-purpose flour, 3/4 tsp soda and 1/4 tsp salt
- Combine dry ingredients into creamed mixture and mix together, use small cookie scoops to form into balls.
- Roll each in granulated sugar, place about 2 inches apart on parchment lined or ungreased cookie sheet
- Use a fork to make a crisscross pattern, or decorate with peanuts halves be as creative as you wish!
- Bake at 375 for 10-12 minutes. Cool slightly, remove from pan and place on cooling rack.
Tips:
If you like a nice crunch on your cookies, try a coarse white sugar to roll the cookie balls in. I buy my decorating sugar at the Bulk Barn, it comes in a variety of colours.
Instead of using the fork pattern, use the bottom of a glass with or without a pattern to press each cookie slightly before baking.
Make smaller dough balls, bake without pressing down. Remove from the oven, place unwrapped Hershey Kiss on the top of each.
