It’s a wrap

It’s a wrap

Wraps make a great lunch, dinner or even appetizers when cut in small 1 inch slices.

Fill up tortillas with your favourite leftovers. Start by spreading some mayonnaise and Dijon mustard or any other spread that you like. Layer with your filling. Here is an example of what I made from my leftovers …spinach, red peppers, tomatoes, olives, cheese and meat.

Keep about 1 inch clear around the edge of the tortilla when spreading the filling.  Make one roll from the bottom, fold about an inch on either side of the tortilla, continue to roll tightly to the top. The mayonnaise, mustard spread will help keep the wrap sealed.

I cut the wrap in half if I am serving right away or Saran wrap  it and store in the fridge for a quick meal later.

Parchment baking cups, my new favourite cupcake and muffin liners. I made carrot cake cupcakes and used these liners in muffins tins. They released from the liners so easily, the individual cakes looked so special when iced, decorated and presented on a cake plate.

The best part is there is no fussing with removing the liners when getting ready to indulge.

I discovered this pan when I was in the United States years ago. I still have the original but had to add another one when I found it at a store close to home.

I love that I can enjoy a smaller portion size slice of my favourite cake. I also like the fact that I end up with 4 loaves, I often add different toppings to some. The loaves freeze really well in Ziplock bags.  They thaw quickly which comes in handy when you feel like something sweet or when unexpected company drops in.
