Gingerbread Muffins

Gingerbread Muffins

Ingredients:

2 1/2 cups flour

1/2 cup brown sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 tsp cinnamon

1 1/4 tsp ginger

1/8 tsp cloves

1/2 cup molasses

1/2 cup room temperature milk

2 room temperature eggs

1/2 cup cooled melted butter

2 tsp vanilla extract

coarse sugar for sprinkling

Instructions:

Preheat oven to 400F.

Spray muffin tin or use cupcake liners.

In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger and cloves.

In a separate bowl whisk the rest of the wet ingredients.

Add the wet ingredients to the dry ingredients and stir until combined.

Divide batter into 12 muffin cups, sprinkle with coarse sugar.

Bake for 8 minutes at 400F leaving the muffins in the oven. Reduce temperature to 350F and bake for an additional 8-10 minutes.

Remove to a cooling rack.

Shortbread inspired by Ted Lasso

Ingredients:

1 cup butter unsalted

2 cups flour

3/4 cup granulated sugar

1/2 tsp salt

1 tsp vanilla

Directions:

cut butter in small pieces and soften at room temperature.

Heat oven to 350 F. Grease or use parchment lined 9 x 13 inch pan.

Mix the flour, sugar and salt using an electric mixer or food processor.

Add flour, butter pieces and vanilla and mix until the dough forms into a coarse meal texture.

Press the dough into the prepared baking pan using a spatula. Prick the top of the dough all over with a fork.

Bake for about 30 to 35 minutes until golden brown.

Cool completely before slicing.

Sherry’s M&M Cookies

Sherry’s M&M Cookies

Who knew that the taste of M& M’s could be transformed into a delicious holiday cookie my son in law’s Mom Sherry did! This was given to her by a family friend and has quickly become a family favourite especially during the holidays. Give it a try, the sweet taste of these cookies will have you coming back for more!

Ingredients

1 cup butter softened

1/3 cup granulated sugar

1/2 cup icing sugar

2 cups flour

1 tsp vanilla

1 Tbsp water

1 cup mini M&M’s

1/4 cup icing sugar for coating baked cookie

Directions

Preheat oven to 325F

Beat butter until creamy, add granulated, icing sugar, half the flour, vanilla and 1 tablespoon of water. Continue beating until combined.

Add the remaining flour beat until the dough comes together.

Mix in the M&M’s until combined.

Using cookie scoop or spoon measure and shape into 1 inch cookie balls.

Add about 3 mini M&M’s on top of each cookie ball and gently give one more roll.

Place on ungreased or parchment lined cookie tray.

Bake at 325F. oven for approximately 13-15 minutes. Bottom of cookie should be lightly brown.

Let cookies cool on the tray for about 2 minutes then place on cooling rack. After about 5 minutes toss each cookie in icing sugar. Return to cooling rack to fully cool and set.
