Jeff’s Apple Pie

 ♥This recipe has been taste tested and family approved for being Just Amazing! My brother makes the best pies, the crust is so flaky and the the filling is out of this world. Little did I know that he learned from the best!

Here is Jeff to give you details on his apple pie. I hope you try out his recipe, it’s the only way to find out how special  it is.

 

This recipe was passed down from my mother and I have had it for over 40 years. I love apple pies and my Mom’s were the best.  I remember watching her making it and it was during one of those times that I wrote down her recipe.

The tartness of the granny smith apples, combined with the sugar and spices makes for a delicious pie filling.

I started making this pie every Christmas but now because of popular demand I make it all year around.

I am proud to have this recipe that has been enjoyed by my family for decades and now I am more than happy to share it with you!

 

Preheat oven to 350 F

Ingredients

Pastry:

2 cups All purpose flour

1 tsp salt

2/3 cups shortening

6 Tbsp cold water

Sift flour and salt into a mixing bowl. Cut shortening into the flour using a pastry cutter until the mixture is crumbly.

Pour cold water into the dry ingredients and form into two balls.

Lightly flour your work service and roll each ball of dough to fit into your pie dish.

 

Filling:

6 Granny Smith Apples (peeled cored cut into 12 slices per apple)

3/4 cup white granulated sugar

1/4 tsp all spice

1 tsp cinnamon

1/4 tsp nutmeg

1 Tbsp cornstarch

1 Tbsp fresh lemon juice

2 Tbsp butter

1 egg beaten

Put the cut apples in a medium bowl, coat the apples with lemon juice. Combine sugar, all spice, cinnamon, nutmeg and cornstarch and sprinkle over the apples. Pour the apple mixture into the pie shell.

Cut butter into small pieces and scatter over the apples.

Cover the  apples with the  top pastry. Seal edges with water and then crimp.

 

Brush the top pastry with the beaten egg. Prick the top of  the  crust  with a fork.

Bake in a preheated 350 F oven for approximately 50 minutes.

Best enjoyed on the same day or freeze for later use.

Serve with Vanilla ice cream or with a slice or two of cheddar cheese.

Use any left over pieces of pastry to make cut out shapes for the top of the pie.
