Bob’s Singapore Style Cabbage

We are always looking for eating light without giving up flavour. Cabbage takes the place of pasta and makes this dish filling with practically no carbs. This tasty dish is also low in calories and the best part is that it can be prepared in about 20 minutes.

Ingredients:

1/2 cabbage thinly sliced

1 carrot thinly sliced

1 onion thinly sliced

1/2 red pepper thinly sliced

2 Tbsp vegetable oil

1 Tbsp curry powder

1 tsp tumeric powder

1 egg

8 oz shrimp (medium size)

Instruction:

In a medium size bowl, combine vegetables with oil and spices. Stir to coat throughly.

Sautee the mixture in a large frying pan until the cabbage is tender. Remove the vegetables onto a platter and keep warm. Crack an egg into a heated frying pan, break the yolk and stir until set. Remove the egg and slice into thin strips. Add shrimps to the frying pan, stir fry until just cooked. Combine the egg and shrimp into the cabbage mixture. Toss and serve.

Tips:

Substitute chicken for shrimp.

Add a few drops of Asian fish sauce or hot serve before serving.
