Potato Crusted Quiche

Ingredients

  • 2 medium size potatoes (1 sweet, 1 white thinly sliced potatoes)
  • tomatoes (1 cup cherry or 2 medium sized tomatoes sliced)
  • 1 bunch of asparagus
  • 1 white onion chopped
  • 1 large clove of garlic chopped
  • 5 eggs
  • 3/4 cup milk plus 1/4 cup cream
  • 1/2 cup cheddar cheese
  • 1/4 grated Parmesan cheese
  • 2 Tbsp olive oil

Directions:

  • Preheat oven to 400 F.
  • Grease a quiche dish or deep dish pie plate. Mix oil into both batches of potatoes slices add salt and pepper adding more oil if necessary.
  • Line your dish with the potato slices starting with one layer of white potato followed with a layer of the sweet potato slices, making sure to fill all the gaps.
  • Place in a 400F oven for 15 minutes
  • Meanwhile fry the the garlic in olive oil until fragrant, add onions and cook till softened.
  • Remove the potato crust from the oven and reduce the temperature to 350F.
  • Layer the onion and garlic mixture on top of the potato crust.
  • Add the sliced tomatoes followed by the asparagus.
  • Sprinkle the cheese and parmesean over the asparagus.
  • Mix the eggs, milk, cream together add salt, pepper and pour over the layers.
  • Bake for 30 minutes at 350 F.
  • Remove and let sit for about 15-20 minutes.
