Bob and I have been enjoying making our own frozen yogurt with fruits. It is a great way to boost up our calcium intake without a lot of added sugar.
As we get close to summer I have been wanting to make frozen yogurt Popsicles. On a recent trip to Costco I saw an item that I had to have. The Zoku ice pop molds went into my shopping cart and I have used it several times.
Here is a recipe to get you started!
Ingredients:
2 cups strawberries
1/4 lemon
2 cups plain Greek yogurt
1/4 cup (or more) maple syrup
Preheat oven to 400 F
Clean, hull and dice strawberries. Pour freshly squeezed lemon juice over the strawberries and mix well.
Pour into a pie dish or pan and bake in a 400 F oven for 20 minutes. Remove from the oven and let cool.
Mix 2 cups of yogurt with 1/4 cup of maple syrup. Blend the cooled strawberry mixture into the yogurt, remembering not to over mix.
Spoon into the individual Popsicle containers. Insert a stick into each.
Place in the freezer until completely frozen, approximately 6 hours or overnight.
To remove the Popsicles from the holder place them in a glass of warm water for a few moments and then pull gently on the handle to release them.
Tips:
Sweetened yogurt can be substituted.
Change up the fruits to what’s in season.
If you don’t want to cook the fruits, chop them or puree in the food processor.
Sweeten with honey or sugar.
