Ingredients
- 2 medium size potatoes (1 sweet, 1 white thinly sliced potatoes)
- tomatoes (1 cup cherry or 2 medium sized tomatoes sliced)
- 1 bunch of asparagus
- 1 white onion chopped
- 1 large clove of garlic chopped
- 5 eggs
- 3/4 cup milk plus 1/4 cup cream
- 1/2 cup cheddar cheese
- 1/4 grated Parmesan cheese
- 2 Tbsp olive oil
Directions:
- Preheat oven to 400 F.
- Grease a quiche dish or deep dish pie plate. Mix oil into both batches of potatoes slices add salt and pepper adding more oil if necessary.
- Line your dish with the potato slices starting with one layer of white potato followed with a layer of the sweet potato slices, making sure to fill all the gaps.
- Place in a 400F oven for 15 minutes
- Meanwhile fry the the garlic in olive oil until fragrant, add onions and cook till softened.
- Remove the potato crust from the oven and reduce the temperature to 350F.
- Layer the onion and garlic mixture on top of the potato crust.
- Add the sliced tomatoes followed by the asparagus.
- Sprinkle the cheese and parmesean over the asparagus.
- Mix the eggs, milk, cream together add salt, pepper and pour over the layers.
- Bake for 30 minutes at 350 F.
- Remove and let sit for about 15-20 minutes.
