Apple Spice Oatmeal Cookies

A sign of a good cookie is one that can be enjoyed any time of the day. I love oatmeal and when combined with apples and cinnamon it makes for a special recipe.

Check it out, a cookie that is a nice alternative to a muffin!

Ingredients

2 1/4 cup flour

1 tsp baking soda

1 1/2 cup oatmeal

1 tsp cinnamon

1 cup margarine

1 cup brown sugar

1/4 cup white sugar

1 tsp vanilla

2 eggs

1/2 cup chopped apples

White chocolate for drizzle

Instructions

Preheat oven to 375F

Beat margarine with sugars. Beat in eggs and vanilla until well blended.

In separate bowl combine and stir together the flour, oats, baking soda cinnamon and apples.

Gradually add to the wet ingredients until blended.

Drop by tablespoon full on ungreased cookie sheet.

Bake for about 8 minutes until lightly brown.

Cool for a few minutes before placing on cooling rack.

Melt white chocolate chips. Drizzle over cookies.

Tips:

I had a mixture of cinnamon, sugar, raisins and nuts that was blended in a food processor (it was leftover from another recipe). I sprinkled over the top of the cookies for an extra special treat.

Extra dough can be frozen so that cookies can be freshly baked when you need. Flash freeze individual size balls. Place frozen portions on a cookie sheet while preheating the oven, then simply pop in the oven to bake.

Lactose Free Oatmeal Muffins

Lactose Free Oatmeal Muffins

Check out these healthy muffins that are not only lactose free but are gluten free as well! This recipe uses oatmeal milk that is made using the Ellie Nut Milk Bag @ellisbest visit my YouTube channel (Lalitha’s Just Amazing Recipes) to see it being made. I have also made it using almond milk, equally delicious.

The lactose free milk and applesauce are homemade. I can defiantly notice the difference between store bought versus the made at home version. I also like knowing the ingredients that go into making my food.

Ingredients:

2 1/2 cups oats plus 2 Tbsp oats for muffin tops

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 cup chopped dates or raisins

2 eggs

1/3 cup honey

1 cup apple sauce (see tips for homemade)

3/4 cup milk ( oat or almond)

2 tsp vanilla

Instructions:

Measure 1 1/2 cup. Process or blend the 1 1/2 cups of oats until it turns into a flour consistency. Set the rest of the whole oats aside (1 cup gets incorporated into the muffin batter with the remaining 2 Tbsp for the muffin top).

Preheat oven to 350 F and prepare muffin tins with liners or grease well. This recipe makes 12 muffins.

Combine the oat flour and 1 cup of the whole oats together in a large bowl. Add baking powder, baking soda, cinnamon, salt and dates, set aside.

In a separate bowl, lightly beat 2 eggs, add honey, milk, apple sauce and vanilla.

Add the wet ingredients into the dry and combine gently.

Scoop batter into muffin tin. Sprinkle with the reserved whole oats.

Bake for 18-20 minutes.

Tips:

Cranberries, raisins or dates are great dried fruits to add to this muffins.

Make 1 cup of your own apple sauce by combining 3 peeled and chopped apples, 1/2 cup water, 1 lemon slice. Bring to a boil and cook for 15 minutes. Remove from heat and mash. Add sugar and cinnamon to taste.

Pan Seared Salmon & Greens

Pan Seared Salmon & Greens

This tasty salmon dish checks off a lot of boxes on the healthy eating score card. It is simple to make and delicious in flavour.

Ingredients:

Avocado

Lime Juice

Salmon Fillets

Chili

Cumin

Salt & Pepper

Onions

Oil

Soya Sauce

Spinach

Direction:

Pit and scoop out avocado. Chop into small pieces, season with salt and pepper, drizzle with lime juice and olive oil. Mix to incorporate and set aside.

Sprinkle salmon with salt, pepper, chili and cumin. Meanwhile toss sliced onion with 1 tablespoon each of olive oil and soya sauce. Cook in a frying pan until caramelization occurs, approximately 10, set the onions aside.

In a hot frying pan add 1 tablespoon of coconut oil (or other oil that can withstand high heat), place salmon fillet seasoned side down. Cook for about 3 minutes without disturbing. Flip the salmon and remove from heat.

In a frying pan, add spinach tossed with oil and cook for a few minutes until wilted.

Plating:

Place spinach on a serving platter, top with avocado garnished salmon. Sprinkle with caramilized onions.

Tips:

For a gluten free meal, make sure that you are using gluten free soya sauce.

Alter and adjust seasoning to your taste and the number of serving portions.
