Cranberry Pecan Mini Loaves

Cranberry Pecan Mini Loaves

INGREDIENTS

1/2 cup butter softened

3/4 granulated sugar

2 eggs

1 tsp vanilla

1 1/2 cups all purpose flour

1 1/2 tsp baking flour

1 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1 cup sour cream

TOPPING

2/3 cups packed brown sugar (mixture of dark and light)

1/3 cup butter

1/4 tsp cinnamon

1 1/4 cups fresh cranberries

1/2 cup chopped pecans

Preheat oven to 350F.

For topping, in saucepan bring sugar, butter and cinnamon to boil over medium heat, stirring. Pour into greased 4 mini loaf pans. Immediately sprinkle with cranberries and pecans, set aside.

In a large bowl, beat softened butter with sugar until fluffy. Beat in eggs one at a time and add vanilla.

Sift together flour, baking powder, baking soda, cinnamon and salt. Gently stir half into creamed mixture; stir in sour cream and remaining flour mixture.

Spread and divide batter over cranberry layer in the mini loaf pans.

Bake in 350F. oven for 25-30 minutes.

Cool 5-10 minutes then invert onto cooling rack or serving plate if serving warm.

Tips:

Original recipe was making this in a 9 inch springform pan. Foil is wrapped around the bottom of pan and setting on a baking sheet before placing in the oven. Baked at 350F for 1 hour or until cake tester comes out clean.

Fettuccine Carbonara

Fettuccine Carbonara

Ingredients:

  • 8 oz Fettuccini Noodles
  • 2 eggs
  • 1/2 cup Parmesan Cheese
  • 5-6 slices bacon, diced
  • 2 large cloves of garlic
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions:

Bring water in a large pot to a rolling boil, add salt. Add Fettuccine and cook for about 9 minutes.

Reserve 1/2 cup of water and drain well.

In a bowl, whisk eggs and Parmesan cheese and set aside.

Heat a frying pan over medium high heat. Add bacon and cook for 5 minutes or until crisp. Stir in garlic for an additional minute and reduce the temperature to low.

Add the fettuccini and egg mixture gently stirring until combined. Add reserved pasta water starting with 1 tablespoon at a time until all the pasta is moistened or desired consistency is reached.

Sprinkle with salt and pepper to taste, garnish with chopped parsley and serve.

Makes 4 servings

Butter Tart Squares

Butter Tart Squares

Ingredients:

1 1/3 cup flour

2 Tbsp granulated sugar

1/2 cup butter slightly softened

2 eggs

1 1/4 cup brown sugar

1/4 cup melted butter

1 cup raisins

1 Tbsp white vinegar

1 tsp vanilla

1 tsp flour

Directions:

Preheat oven to 350 F.

Mix first 3 ingredients (flour, granulated sugar and butter) in food processor until crumbly. Press into a greased or parchment lined square pan.

Bake for 10-12 minutes or until light brown.

Sprinkle 1 cup of raisins over the base.

Beat eggs and brown sugar together with a whisk until blended. Stir the remaining ingredients. Mix well and pour mixture over the base.

Bake for 25 to 30 minutes until set and golden brown.

Let cool completely then cut into squares.
