Baked Samosas

Makes 4 dozen

1 Tbsp vegetable oil

1 onion chopped

2 tsp garam masala

1/2 tsp salt

1/2 tsp chili powder

3 medium potatoes, peeled, cut into small cubes and cooked for 4 to 5 minutes

4 Tbsp peas

Heat the oil and fry onions until tender. Sprinkle with garam masala, salt and chili powder. Fry for another minute, add the potatoes and peas. Mix well and fry for another 2 to 3 minutes until potatoes are tender. Sprinkle with a squeeze of lemon juice.

Place 1 teaspoon of the potato mixture in the centre of the wonton wrapper. Moisten the edges and fold over, forming a triangle. Press the edges to seal.

Once all are assembled, brush oil on both sides of each samosa and place on a baking sheet.

Bake at 350 F for 6 minutes on each side or until golden brown.

Serve with tamarind sauce, coriander sauce or your favourite chutney.
